Belper Celebration Magazine Recipe 1
Jean Robinson is an award wining cook - national as well as local - who has agreed to share one of her recipes with you, and the people of Belper.

This being BARRA APPLE CAKE which is served most days in the tiny
waiting room snack (should that be shack) bar located on the small
airport on Cocklshell Beach, North Barra, in the Outer Hebrides.
This Recipe is taken from our first magazine printed in Oct / Nov 2001

Ingredients

1 lb cooking apples peeled
and chopped
1 ib self raising flour
8 oz granulated suger
8 oz margarine
2 beaten eggs
1/4 pint milk
2 oz sultanas
3 teaspoons mixed spice
BARRA  APPLE  CAKE
Method

First grease and line a 12 inch x 10 inch baking tin.

Rub margarine into flour and mixed spice.
Stir in sugar and then beaten eggs and milk.
Finally stir in apples and sultanas.  

Place the mixture in the prepared tin, scatter with the topping and bake ( in a pre heated oven)
for 45 minutes.   ----   Oven temperature is 180C/350F or Gas Mark 4

When cold cut into slices for serving.

It is delicious when served hot with custard, but can be served cold as a biscuit.
For the topping - 1 teaspoon mixed spice and 3oz Demerara sugar
